Golden Dream Caramels

Ingredients:
  • 4 Golden Dream Tea Bags 
  • 12 ounces (1 1/2 cups) heavy cream
  • 4 ounces (8 tablespoons) unsalted butter (divided use)
  • 11 ounces (1 cup) light corn syrup
  • 14 ounces (2 cups) granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Additional flaked sea salt for topping (optional)
Instructions:

Directions Line an 8x8 pan with parchment or aluminum foil extending up the sides, and spray the pan with nonstick cooking spray. Combine the tea bags, heavy cream, and half of the butter (2 oz). Place the pan over medium heat and bring the mixture to a simmer (don't boil it). Remove the pan from the heat, cover it with a tight-fitting lid, and let it sit for 30 minutes to infuse the flavors. This will produce a caramel with a subtle but noticeable flavor. If you want a very strong flavor, continue to infuse the cream for an additional 15-20 minutes. Remove the tea bags and squeeze them over the pot of cream to remove any excess moisture and get all of the tea flavor into the cream. Be careful with this step, the tea bags will be very tender and prone to breakage.  Combine the corn syrup and the sugar in a 4-quart saucepan and place the pan over medium-high heat. Stir until the sugar dissolves into the corn syrup and continue to stir until it begins to boil  Cover the mixture with a lid and let it boil for 4-5 minutes  Remove the lid. Insert your candy thermometer, without stirring, the temperature should reach 320 F Once the temperature reaches 320 F, add your cream mixture. Be careful! The mixture will grow and bubble. The temperature will drop dramatically  Stir frequently until the temperature drops to 250 F. If you wish to have your caramels more firm, allow the temperature to drop to 225 F.  Remove from heat once it reaches your desired temperature. Add the remaining butter (2 oz), 1/2 tsp, and vanilla extract.  Pour into prepared pan  Let caramels until set about 4-12 hours  Once caramels are set, remove them from the pan and remove the foil or parchment paper  Using a sharp knife, cut the caramels into bite sized pieces.

We make them for any and all events, and they are the perfect way to impress your friends with a delicious candy treat that carries over notes of our most popular tea. The calming chamomile really pulls through in the flavor, accenting the sweet caramel taste, with subtle characteristics of spearmint, lemongrass, and orange peel.

And the best thing: they are CBD infused!

Using the method below, you can safely infuse your caramels. Remember, LOW and SLOW. CBD is sensitive to heat, and you’ll want to delicately infuse the mixture, being conscious of heat and the rate in which you incorporate your infused cream mixture.

Why Golden Dream for CBD Tea Caramel?

  • In a separate pan, combine the corn syrup and the sugar in a 4-quart saucepan and place the pan over medium-high heat.
  • Stir until the sugar dissolves into the corn syrup and continue to stir until it begins to boil
  • Cover the mixture with a lid and let it boil for 4-5 minutes
  • Remove the lid. Insert your candy thermometer, without stirring, the temperature should reach 320 F
  • Once the temperature reaches 320 F, slowly add your infused cream mixture. Be careful! The mixture will grow and bubble. The temperature will drop dramatically.
  • Stir frequently until the temperature drops to 250 F. If you wish to have your caramels more firm, allow the temperature to drop to 225 F.
  • Remove from heat once it reaches your desired temperature. Add the remaining butter (2 oz), 1/2 tsp, and vanilla extract.
  • Pour into prepared pan
  • Let caramels until set about 4-12 hours
  • Once caramels are set, remove them from the pan and remove the foil or parchment paper
  • Using a sharp knife, cut the caramels into bite sized pieces.
